About a months supply of Pilot Bread was made using filberts,sunflower,flax and whole wheat flour. The seeds were beat into a mash in the blender and added to the whole wheat flour. The mixture was kneaded into a ball, a portion made into a roll, cut into slices, patterned on both sides to insure through baking, placed on teflon cookie sheets and baked at 375F for 30 minutes, flipped over and baked again for 30 minutes. The finished product is basically devoid of moisture and fairly hard, but there is enough oil from the flax particularly to make the slice chewable.It is stored in a five gallon pail at room temperature, but for longer storage it may be vacuum packed if desired. I seldom have mold forming.I use the product as a replacement for typical store bought bread.The seeds ingredients are varied as desired.There is no salt or sugar added.
