Vegetable Juice. 18 July 2013 Vegetable Juice.
Current mature garden vegetables were made into juice.Weight of 15 pounds and 10 litres of finished product. Selected were cucumbers, green beans, onion, basil, garlic,tomatoes, carrots.The vegetables were cut into manageable pieces and boiled until soft, then made into a slurry with a hand blender. The slurry was then put through a food mill to strain.The residue of the food mill was put through a Champion juicer to extract most of the nutrients. The finished product was then pressure canned at 15 PSI for 15 minutes for long term storage.Pictures depict most of the process. This procedure is to preserve produce for off season use.
