Elderberry Juice

Five pounds of elderberry (Sambucus canadensis) were picked today and made into five litres of juice.The berries were plucked from the bushes with the substrate attached, swiped across a mesh to remove the berries, washed, water added to cover the berries, cooked, made into a slurry and strained to remove the numerous seeds. The obtained juice was poured into litre jars and pressure canned at 15 PSI for 15 minutes.This is the first berries of the season and they are relatively poor quality, small, sparse, unevenly ripened and not fully enlarged. The season ends about 15 of September in my Zone 5.
