Four sugar beets, weight 15 pounds total, were processed into a sweet slurry and seven liters were pressure canned at 15 PSI for 15 minutes for long term storage. The slurry taste is simply sweet with no perceivable flavor, which will be used as a sweetener for morning cereal. The beets were washed and all dark material removed, cut into small pieces and cooked and beat into a slurry. The slurry was strained to determine if there was significant fiber, of which there was virtually none. Further processing would result in a molasses or further into crystal sugar. I chose to stop and utilize the beets at this stage of processing, since it meets my sweetener needs.This is my first experience with sugar beets.
