Two small pumpkins were converted into juice. The outer rinds were incorporated. The seeds and centre mush was discarded.I chose small pumpkins, but see no reason why larger could not be used.

Method: Cut the pumpkin into small pieces, boil until soft, beat into a mash with the hand blender, put through a mechanical strainer. The juice was then Pressure Canned at 15 PSI for 15 minutes for long term storage at room temperature. Six litres of juice was obtained from the two pumpkins.

In N.A. pumpkins are used only for pies or jack-O-lanterns at Halloween. After studying the beneficial nutrition value of pumpkins, I decided to experiment.The juice is pleasant to drink. Just another vegetable for consumption and variety, and readily available, and easy to grow in my area.
