About one pound of red lentil tempeh was made, dehulled from bulk barn. Annotated pictures depict the method. The lentils are only cooked for two minutes since.they are dehulled and cook quickly. They coagulate if cooked longer and the mycelium cannot penetrate through the lentil block, hence no fermentation. The end product is perfect.The fermentation was 31C for about 40 hours. Lentil tempeh is easy to make.
