22 August 2021 40 liter jars

I managed 40 liters of Pressure Canned tomato juice from the 80 pounds of garden tomatoes. That is two pounds of pure tomatoes per liter. The product is pressure canned at 15 PSI for 15 minutes. This slurry/juice process utilizes most of the product, the throwaway discharge is minimal. I have kept produced material for three years without spoiling. The picture is of the 40 jars.
