While experimenting making kefir it was found the product could be made using the whey from the previous batch as a starter. Apparently there is enough bacteria to produce kefir. A portion of the whey is used as a drink and some is mixed with 3.5% homo pasteurized milk and allowed to ferment for about 24 hours to allow separation into solids and whey, making a new batch. The solid portion is ingested similar to Yogurt or allowed to drain and made into a soft cheese. The whey is siphoned off using a plastic tube. Pictures depict my process.
