One purple cabbage about 4 pounds was left in the garden. It was decided to juice it. Some eggplant,kale,Brussels sprouts and green peppers were added to increase the weight. About 8 liters of water was added and the products were cooked, made into a slurry, strained then pressure canned at 15 PSI for 15 minutes in liter jars.There is little juice in cabbage, the water absorbing the plant material is the juice basically everything smaller than 2mm the screen size. Nine liters of juice was obtained.Pictures depict the process.
